Resumen

The conditions applied were at two different temperatures (130 and 210 °C) and two different atomizer speeds (23000 and 23500 rpm) with a feed flow of 22 mL/min and an air consumption of 84 kg/h. The best inulin yield was 67%, obtained in the conditions of lower temperature and higher atomizer speed (130 °C and 23500 rpm), while the lowest performance, 53.8%, was obtained in conditions of lower temperature and lower atomizers speed (130 °C and 23000rpm). The factor that had a significant effect on the spray drying performance of inulin was the atomizer speed (p = 0.00).
