Resumen

Phenolic compounds are molecules that provide health benefits. However, they present problems for their use. The use of wormlike reverse micelles to load aqueous extracts of Psidium guajava (guava) was carried out. Different solutions (i.e., content variation of canola oil, oleic acid, soy lecithin; stirring time, stirring speed) were obtained by incorporation of water by ultrasound and centrifugation. The behavior of the wormlike micelles was evaluated with optical microscopy, simple shear tests, and Raman microscopy with and without aqueous extract of guava leaves. The wormlike reverse micelles solution were adjusted to the Carreau-Yasuda model. Influence of the aqueous extracts of guava leaves were observed in the parameters of Carreau-Yasuda model, related with changes in the packing of the hydroxyl groups and high order of packing in wormlike reverse micellar system.
