Spatial distribution of sugar and stevia during solutes transfer in osmotic dehydration of apple

Abstract

This work aims to determine the spatial distribution of solids in osmodried apple cylinders in osmotic sucrose and stevia solutions. Sucrose transfer were calculated. The concentration of Stevioside and Rebaudioside A, were determined. As results it was obtained that stevioside concentration of stevia in apple osmodeshidratada was higher in relation to Rebaudioside A.
The effective coefficients of solids diffusivity were higher in the superficial layers of the material.
