Abstract

The presence of Vibrio cholerae was assayed in 240 samples of fresh and frozen fish fillets, using the methods described in the Bacteriological Analytical Manual of the U.S. Food and Drug Administration. Vibrio cholerae non-O:1 was isolated from 56 samples and Vibrio cholerae O:1 Inaba toxigenic from three samples. From the frozen samples, 17 contained the serotype non-O:1 and one of them contained Vibrio cholerae O:1 Inaba toxigenic. Vibrio cholerae isolation from this kind of food, especially frozen food is important because there are not studies that show the survival of this microorganism, at freezing temperatures, in fish fillets. As Vibrio cholerae non-O:1 was isolated in considerable amount, this bacterium might be considered as a transmission mean for some gastroenteritis diseases.
