Resumen

Characterization based edible films of different compounds is necessary to be applied in specific foods. Edible films made from Candelilla wax have been developed in recent years but it is necessary to develop information on the physicochemical parameters of these to be used. Four formulations of edible films were studied and compared: F1 (Guar gum 0.8% Candelilla w ax 0.2% Glycerol 0.3%), F2 (Guar gum 0.8% Candelilla wax 0.4% Glycerol 0.2%), F3 (Guar gum 1.2% , Candelilla wax 0.2% Glycerol 0.2%) and F4 (Guar gum 1.2% Candelilla wax 0.4% Glycerol 0.3%); parameters such as thickness, density, rate of water vapor permea bility (TPVA), rate of water vapor transmission (WVTR), transparency, humidity and solubility were evaluated.
