The Carica papaya is a herbaceous plant whose leaves, flowers, seeds and latex have medicinal properties and its fruits are considered nutraceutical. Mexico is the world's third largest producer of papaya and is the world's leading exporter of this fruit. In 2021, production increased by 3.2% due to a high internal rate of return of the plantations. The State of Oaxaca is the main producer of papaya in Mexico. Papaya is a climacteric fruit, very perishable and susceptible to physical damage and attacks by microorganisms. Postharvest losses are estimated at 30%. Planning and prospective analysis considers the potential for its use, only 5% is industrialized. The papaya fruit has 71% pulp, 26% skin, and 3% seeds. The products derived from are dehydrated fruit, hydrolyzed pulp for beverages, proteolytic enzymes from the peel, and antioxidant and digestive products from the seeds. The level of processing depends on the product to be obtained. Dehydrated fruit require pretreatment and operating conditions to achieve organoleptically acceptable products. Soluble powders require enzymatic hydrolysis of the pulp puree and spray driers. The use of the shell and seeds requires methods of extraction, concentration, purification and conservation. It is concluded that the use of papaya begins with the pulp and later with the seeds and finally with the peel.
